Chinese character 燜

9181/20992

燜 is a Chinese character for cooking food or drink covered over low heat. Traditional Chinese uses 燜, simplified Chinese uses 焖, and Cantonese writing also has 炆. A Chinese novel even uses it for preparing Pu’er tea, so “braise” only partly captures the method.

What 燜 means

燜 names a covered, low-heat cooking method.

A lid holds in steam while gentle heat cooks the contents; in English, braising, simmering, or stewing with a lid comes close. The 18th-century Chinese novel Dream of the Red Chamber, written during the Qing dynasty (China’s last imperial dynasty), uses 燜 in chapter 63 for preparing Pu’er, a Chinese tea. The example shows that the object can be a drink, not only food.

Why do 燜, 焖, and 炆 differ?

They reflect script and regional writing choices.

Traditional Chinese writing uses 燜; simplified Chinese uses 焖. Cantonese dictionaries also list 炆 for the same covered-pot method. A 2022 study argues that modern 燜 belongs to a family descended from older sealed, low-heat methods used for fermented foods, alcohol, and herbal medicine; it groups related methods such as 煨 and 炖 with this technique family.

A lone 燜 needs context.

In a recipe or menu, read it as a cooking action. In a message without food or cooking context, it does not establish a social reaction; ask what else the sender meant.

Recipe, menu, and kitchen language, with literary use for preparing drinks as well as food.

A lone 燜 does not tell you what the sender feels; ask for context.
