What 胡 means
The word and sentence around it decide the reading.
胡 is also the surname Hu; 胡说 means “talk nonsense,” and 胡子 means “beard” in Simplified Chinese. If 胡 appears alone, the surrounding sentence is needed to choose a sense. In Classical Chinese, it can introduce “why,” “what,” or “how.”
An early Chinese dictionary, 《说文解字》, explains 胡 as the loose flesh beneath an ox’s jaw; it analyzes the graph as a flesh component plus 古, which supplies the sound. A bronze form is documented from the late Warring States. This records a stage in the character’s written development, not its absolute first appearance.
Why does 胡 sometimes mean foreign?
It names a changing historical category, not one ethnicity.
In materials from the Han and Tang periods, 胡 ranges from an early association with the Xiongnu to broader labels for northern and western peoples; Tang-era texts also use it for Central Asian communities. It was a shifting category used by Chinese writers, not one people’s stable self-name.
Words such as 胡琴, a Chinese bowed-string instrument, and 胡椒, pepper, preserve older associations with foreign origins. This history explains those compounds; it does not make 胡人 a neutral label for a person today.
胡说 is a blunt dismissal of someone’s words; 胡 as a surname is simply a name.
Do not treat 胡人 as a precise present-day ethnic label.

1Why does 胡 show as a box on some devices?
Because that device's fonts have no glyph for it. The character is still correct and still copies correctly — the box is a missing glyph, not a broken character.
