In 采集, it contributes the sense “gather.” Traditional Chinese writes the same word 採集, while simplified Chinese writes 采集. 彩 means “color”; it contains 采 for its Mandarin sound, not its picking meaning.
In late Shang (c. 1300–1050 BCE) oracle-bone inscriptions, an ancestor of the character is pictured as a hand picking from a tree. Shang–Zhou bronze inscriptions also use 采 for a fief: territory granted by a ruler.
